When I was a kid, my parents would take me to visit my grandparents in the countryside every summer. The long drive was always a bit of a slog, but it was always worth it to see my grandparents and spend time exploring the nearby countryside.
One of my favorite things to do on those trips was to watch the motorbikes go by. There were always so many different kinds, and they were all so loud and impressive. But there was one motorbike that always stood out from the rest: Jay’s Golden Dragon.
Jay’s Golden Dragon was a custom-built motorbike that was unlike anything else I had ever seen. It was sleek and shiny, with a bright yellow paint job and a long, flowing tailpipe. But what really set it apart was the dragon that was emblazoned on the side of the tank. The dragon was golden and fierce, and it seemed to stare right at me as the motorbike went by.

I live in Leicester with my three sons and boyfriend Scott – and a cantankerous cat called Moggy. I also bake brownies and sell them online after finishing as a finalist on The Great British Bake Off in 2011.
